Crab Palabok

1: Cook the rice noodles as per package instructions, rinse, drain, and set aside.

2: Heat avocado oil in a skillet over medium heat. Sauté the onion and garlic until translucent.

3: Add the ground pork, cooking until browned. Season with salt, pepper, and 1 tsp of smoked paprika.

4: Stir in the cooked crab meat and cook for 2-3 minutes. Set aside.

5: In the same skillet, add the annatto water for color. Pour in the chicken broth and bring to a simmer.

6: Add fish sauce, starting with 1 tsp and adjusting to taste. Mix tapioca flour with a little water, add to the skillet to thicken the sauce.

7: Place cooked noodles on a serving dish. Ladle the sauce over the noodles, then top with the meat and crab mixture.

8: Garnish with sliced hard-boiled eggs, green onions, and optional pork rinds. Serve with lemon or calamansi wedges.
