Gourmet Cassava Cake

1: Preheat the oven to 350°F (175°C).

2: Grate the fresh cassava root and place in a mixing bowl.

3: Add honey or maple syrup, coconut milk, shredded coconut, salt, vanilla extract, pandan leaves, and pandan extract to the cassava and mix well.

4: Pour the mixture into a greased baking dish and bake for 60 minutes or until set.

5: While the cake is baking, prepare the ginger coconut cream by mixing coconut cream, honey or maple syrup, vanilla extract, and grated ginger in a bowl.

6: For the caramelized pineapple, heat coconut oil in a pan and add pineapple pieces and honey or maple syrup. Cook until the pineapple is soft and caramelized.

7: Once the cake is done, remove it from the oven and let it cool. Serve topped with ginger coconut cream and caramelized pineapple.
