A healthier version of the traditional Filipino breakfast Tosilog featuring pork tocino, extra-garlicky brown rice, and eggs. This dish is sweet, savory, and is an excellent way to start your morning!
Thinly slice the pork loin or pork shoulder.
In a bowl, combine coconut aminos, maple syrup, pineapple juice, minced garlic, kosher salt, black pepper, smoked paprika, calamansi or lime juice, and avocado oil or coconut oil. Mix well.
Marinate the pork in the mixture for at least 30 minutes.
Heat avocado oil or coconut oil in a pan and fry the marinated pork until cooked.
For the extra-garlicky brown rice, heat avocado oil or coconut oil in another pan, add chopped garlic, and sauté until fragrant. Mix in the cooked brown rice and kosher salt. Stir until heated through.
In the same pan, cook the eggs in avocado oil or coconut oil to your preference.
Serve the pork, brown rice, and eggs together. Garnish with optional sliced avocado, fresh cilantro, lime wedges, or spiced vinegar.
