Pho Ga is a flavorful Vietnamese chicken noodle soup featuring rice noodles, chicken drumsticks, and aromatic herbs and spices. It's cooked in a pressure cooker to develop rich flavors quickly. Serve hot with toppings of choice.
Prepare the Broth: Heat avocado oil in a pressure cooker over high heat. Add halved onions and ginger, cooking until well charred, about 5 minutes. Reduce heat to medium, add star anise, coriander seeds, cinnamon stick, cardamom pods, and cloves. Toast until fragrant, about 1-2 minutes.
Cook the Chicken: Add chicken drumsticks, cilantro, water, fish sauce, and maple syrup. Stir to combine. Seal the pressure cooker and cook at high pressure for 20 minutes. Release pressure as per the cooker’s instructions.
Finalize the Broth: Remove chicken, strain the broth, and discard solids. Skim the surface of the broth, adjusting seasoning with fish sauce, salt, and maple syrup as needed.
Assemble the Dish: Prepare rice noodles according to package directions. In serving bowls, place noodles, top with chicken, onions, and scallions. Pour hot broth over. Serve with toppings for guests to add as they wish.
