Ube Kutsinta is a chewy, steamed, slightly sweet Filipino snack/dessert made with cassava flour, coconut sugar, and ube extract, garnished with grated coconut.
Slightly grease your kutsinta molds with avocado oil and set aside.
In a mixing bowl, combine the cassava flour, tapioca flour, and coconut sugar. Stir well to ensure even distribution.
Gradually add the water to the dry mixture, stirring constantly until the sugar is completely dissolved and the mixture is smooth. Add the ube extract flavoring and purple sweet potato powder to the mixture. Stir well to incorporate evenly. Stir in the lye water and mix thoroughly. Smooth the mixture by pushing it through a fine mesh strainer.
Fill the prepared molds about three-quarters full with the batter.
Steam the molds for 30-40 minutes or until the tops are set when touched. Ensure that the steam is consistent and not too high to avoid uneven cooking.
Remove the molds from the steamer and allow them to cool completely before removing the kutsinta from the molds. Serve the kutsinta with freshly grated coconut.
